Our Genuine Wagyu from Miyazaki 

Wagyu refers to a beef breed in Japan that has genetic characteristics to predispose intense marbling in the muscle. The quality of fat is unique in that is has a high percentage of unsaturated fat; thus, the melting temperature point is lower.

 

Miyazaki Wagyu refers to the Wagyu beef born and raised in the prefecture (or state) of Miyazaki, located in the south eastern coastal state of Kyushu island.

It is a branded beef program that is designated only for cattle receiving strict carcass evaluation for highest degree of marbling, fine muscle fiber texture, white fat color, and cattle conformation.

 

Moreover, Miyazaki Wagyu brand is designated only for the Japanese black haired beef breed among other Wagyu beef breeds: Japanese brown haired Wagyu, polled Wagyu and shorthorn Wagyu.

 

Miyazaki prefecture is located on the southern island of Kyushu, blessed with a 

warm, mild climate and natural surroundings which are  ideal for raising Wagyu cattle.  Miyazaki has the second largest Japanese Black - Wagyu - producing community in Japan and is the main feeder calves supplier for Matsuzaka branded beef which is considered the premium branded beef in Japan.

 

In addition, Miyazaki is known as a world class tourism and resort hideaway, hosting G8 Foreign Ministers Summit in July 2000.  Also, a world famous enclosed "indoor" beach called "Ocean Dome" is found in Miyazaki.

Miyazaki Wagyu cattle are raised with special attention to their diet in order to produce a beef rich in marbling with minimal external fat.  This is made possible with feeding a low energy diet over a longer period of time.  In order to promote slow and natural growth, these animals receive no hormonal implants nor hormonal additives in their feed.  Also, there are strict requirements by which no animal proteins or animal fats are mixed into the feed.

Miyazaki Wagyu complies with a source verification program. This means that the harvested beef can be traced back to the parental lineage, which reaffirms the genetic disposition of the final meat quality and ensure highest safety standard.
